I LOVE My Cast Iron Skillet!!!

Yes, it’s true! This is my new FAVORITE tool in my house! I love cooking with it!! Especially in the oven!

Yesterday I made an amazing Dutch Baby by one of my favorite food vloggers, Chef John. He makes me laugh!!! We also love his calzone recipe, and I’m really interested in trying his croissants and cream puff crack buns.

Back to the Dutch Baby. It turned out sublime! It had a nice custardy middle, yet it was fully cooked. I loved the crispy outside, yet tender middle. And topped with a bit more butter, powdered sugar and sliced strawberries . . . it was heaven!

I also tried his powdered sugar and lemon juice suggestion. . . YUM!!!

If you don’t have a cast iron skillet, I have made Dutch Babies in a 9×13 oven safe dish or mini muffin pan. Both are excellent as well, you just heat your pans along with preheating your oven and then take them out once the oven is finished pre-heating and pour in your batter and cook. Super yummy and filling.

And if you have a skillet but you are scared to use it, these two videos (here and here) really helped me open my mind to cooking with it more frequently. Now I do every day!

I don’t mind taking care of it. I actually find it cathartic because I now know that the benefits of added iron to my family’s diet has been a very positive blessing. 💕

Chef John’s Dutch Babies
Ingredients for 4 small or 2 large portions:
3 large room temperature eggs
2/3 cup room temperature milk
packed 1/2 cup flour (really pack the measuring cup firmly with flour)
1/4 tsp vanilla extract
1/4 tsp salt
3 tbsp clarified butter
– Bake at 425 F. 20-25 min
* garnish with melted butter, fresh lemon juice (Meyer if you can find it), and powdered sugar.
