The sounds of ripping packing tape fill the air. It is another humid day (70%) and Paul is already dripping in sweat at 10 a.m. in the morning.
Bless his heart! He has personally wrapped each and every item that cannot fit in a regular box. He has worked so hard, and with only the help of our family. Due to COVID-19, no one is allowed on the property to help him.
He truly is amazing and I dare say, he is being blessed by God to do all of this hard labor by himself. 💕 Thank you Paul! You bless our family by just being your wonderfully hardworking self!
What is my contribution to all of this intense packing? I’m Craft Services on this job site. But not just any run of the mill kind of service, I specialize in using up all the food we have left to eat on our pantry and refrigerator shelves. I take special effort to figure out what yummy recipes can be made to feed our entire family, both physically and emotionally.
Once I figured out the recipes I could make, I had to put them into categories. This system helps the family not feel like they are eating the same old ingredients over and over again.
After the main meals were chosen, next came the list of possible food choices for breakfast and lunch. Did you notice I even made room for desserts? This specific category has been gobbled up fast! But if you look closely, you will see that the recipes are simple desserts and they have also made for a great daily snack, or a nice after dinner treat.
So far, my favorite foods we have had from this list have been:
- Chicken piccata
- Pork Nachos
- Bean Soup with Crispy Plantains
- Spinach Feta Pasta (we substituted goat cheese – it’s what we had and it was good!)
- Apple Dip
- 3 Ingredient Truffles
- Pumpkin Pie
- Zucchini breads
- French toast topped with peaches and whipped cream
- Tuna melts with a salted sliced tomato
I feel very grateful that we have plenty of food to eat right now (especially while being unemployed and being stuck in a foreign country with lessening resources). I also appreciate that the foods we are eating taste really good! These are some of the precious blessings one should never expect, nor take for granted!
I hope my children will remember this experience and share with their children this unique time in their lives. I also hope my children are able to count their own blessings. For one of my greatest joys in life has come from looking for the hand of the Lord in my life, looking to see how He is helping me know that He is with us, and all we need is truly being taken care of!
God be thanked for the matchless gift of His Divine Son!
