Peanut Butter Cookies

We have recently been blessed with the sweetest and cutest sister missionaries in our branch.

I love these girls, I really do! They have been a bright light in otherwise dark days. They have made it feel like the sun has been out all along!

So I wanted to do something special for them. The “gringa” sister, from Arizona, asked if we ever made peanut butter cookies? I said, “Well of course!” She smiled and said, “Oh! That is nice. I just love them.” ☺️

That was the most sincere and non-pushy request I have ever heard for something that I could easily offer her. So, Curly Cook and I whipped up a batch of them and delivered them to the Sisters the very next morning. They were ELATED!!!

I don’t know why the Lord works this way in our lives, but what I DO KNOW is that it works!!! It really does! He knows just how to help us feel heaven a little bit closer in our lives.

For me, making the cookies with Curly Cook brought back tender memories of my own Grandma Wardle, who taught me to enjoy these cookies.

Looking back on my time with her, I remembered being one of the youngest cousins, so I seemed to always miss out on the family favorite grandma cookie, chocolate chip! 🍪

After a family meal together at our grandparent’s house, she would bring out a platter filled with homemade cookies: chocolate chip, oatmeal raisin and peanut butter.

The other cousins, and uncles, would rush to the platter before I even knew it was there. By the time I got to it, only oatmeal raisin and peanut butter cookies were left.

To this day, I still do not like oatmeal raisin cookies, but because of this repeated experience, I learned to love peanut butter cookies!!! They are yummy to me!

Life is FULL of twists and turns!

PEANUT BUTTER COOKIES

Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup 1 stick butter
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 2 Tablespoon milk
  • 2 teaspoons vanilla extract
  • 1 3/4 cups White Kamut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • granulated sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl of an electric mixer, cream the granulated sugar, brown sugar, butter, and peanut butter on low speed. Beat in the egg, milk, and vanilla.
  3. Sift the flour, baking soda, and salt in a mixing bowl. Stir in the sugar mixture and mix thoroughly.
  4. Shape into 40 walnut-sized balls. Rolls the balls in granulated sugar in a small bowl. Place on an ungreased cookie sheet and bake for 8 min (or until small cracks start to show on the cookie)
  5. Remove from the oven and immediately press a Reese’s miniature cup into each cookie. You can substitute Hershey kisses for the Reese’s. Transfer the cookies to a wire rack to cool.
